Spicy Chicken Biryani Recipe

Ingredients
For the Rice:
- 2 cups basmati rice (soaked for 30 minutes)
- 4 cups water
- 2 bay leaves
- 4 cloves
- 2 green cardamoms
- 1 black cardamom
- 1 cinnamon stick
- 1 teaspoon salt
For the Chicken Marinade:
- 500g chicken (cut into pieces)
- ½ cup yogurt
- 1 tablespoon ginger-garlic paste
- 1 teaspoon red chili powder
- ½ teaspoon turmeric powder
- 1 teaspoon garam masala
- 1 teaspoon salt
- 1 tablespoon lemon juice
For the Biryani Masala:
- 2 large onions (thinly sliced)
- 2 tomatoes (chopped)
- 1 teaspoon cumin seeds
- ½ teaspoon black pepper powder
- 1 teaspoon coriander powder
- ½ teaspoon nutmeg powder
- ¼ cup fresh coriander leaves (chopped)
- ¼ cup fresh mint leaves (chopped)
- 2 green chilies (slit)
- 2 tablespoons ghee or oil
- 1 cup milk (with a pinch of saffron)
Instructions
Step 1: Cooking the Rice
1. In a large pot, bring 4 cups of water to a boil.
2. Add bay leaves, cloves, cardamoms, cinnamon, and salt.
3. Drain the soaked rice and add it to the boiling water.
4. Cook until the rice is 70% done (grains should still be slightly firm).
5. Drain the water and set the rice aside.
Step 2: Marinating the Chicken
1. In a bowl, mix the chicken with yogurt, ginger-garlic paste, red chili powder, turmeric, garam masala, salt, and lemon juice.
2. Let it marinate for at least 30 minutes. For the best flavor, marinate for 2 hours.
Step 3: Preparing the Biryani Masala
1. Heat oil or ghee in a large pan and add cumin seeds.
2. Add sliced onions and sauté until golden brown.
3. Add chopped tomatoes and cook until soft.
4. Add the marinated chicken and cook for 10-15 minutes until fully cooked.
5. Mix in coriander powder, black pepper, and nutmeg powder.
Step 4: Layering the Biryani
1. In a large pot, spread half of the cooked rice as the first layer.
2. Add the cooked chicken mixture on top.
3. Sprinkle coriander leaves, mint leaves, and green chilies.
4. Add the remaining rice as the final layer.
5. Drizzle saffron-infused milk over the top for fragrance and color.
6. Cover the pot with a tight lid and cook on low heat for 20 minutes (Dum method).
Step 5: Serving the Biryani
1. Gently fluff the biryani with a fork to mix the layers without breaking the rice.
2. Serve hot with raita, salad, and pickles for a complete meal.
