Until five years ago, doctors used to say that desi ghee and banaspati ghee are not good for health as they produce fat. So you use vegetable oil in cooking. Cooking in this oil is best. But now the same people are attracting people towards oil-free cooking and whole campaigns are being run against the use of oil and ghee. Let us try to know what is the truth behind it.

desi ghee and Banaspati ghee are high in saturated fats. Saturated fats are fatty acids that change their state with temperature. If they are heated, they melt. If they are cooled, they freeze. Unsaturated fats, on the other hand, stay in a liquid state in all weathers. The reason is that they are high in unsaturated fatty acids. Edible oil comes in unsaturated fats while ghee comes in saturated fats. Some people do not consider the use of desi ghee as good for health. This is only for people whose body cholesterol level is very high or they have blood pressure and heart disease and are physically lazy and inactive. Otherwise, desi ghee contains HDL (High Density Lipoprotein) which is very important for our body's metabolism. Many hormones are produced due to desi ghee. When the liver is unable to remove them from the body, they cause complications in the body. So cooking oil or ghee is fine if it is heated once. Re-cooking in used oil is extremely unhealthy.

Flash point is the heating temperature of any oil at which any oil catches fire. It is also called fire point. The higher the flash point of the oil, the better the oil quality. So coconut oil, avocado oil, extra virgin olive oil, etc. All these oils are much better than other oils, but their use is good only to a certain extent. It is better to use them as is rather than cooking in them. Because free radicals are also generated in them when heated. Now the question arises that what is the best solution to avoid all these dangers? 

The best solution to avoid the concerns

and reservations about cooking oil is to promote oil free cooking. In this method we use water instead of oil. Now some people will raise the question, what about the taste? See if you saute the onion and spices well using water, I can claim that the food prepared in this way will taste the same as food cooked in oil. Rather, it will be much better. Oil-free cooking can help you avoid many diseases like heart disease, cancer, stomach and liver problems and diabetes to a great extent. In addition, this method is also economical. The extra burden of oil on your pocket will be gone. Youngsters who are physically active must consume desi ghee as per RDA (Recommended Dietary Allowance).
