Chicken cheese paratha rolls are a delicious homemade snack made with spicy chicken, melted cheese, fresh vegetables, and soft parathas. They are perfect for lunch, evening tea, school lunchboxes, or a quick family meal. You can prepare the filling with simple ingredients commonly available in Pakistani kitchens. This recipe explains how to make flavorful chicken filling, assemble the rolls, and cook them until warm and lightly crispy.
Preparation and Cooking Time
Preparation time: 20 minutes
Cooking time: 25 minutes
Servings: 4 rolls
Ingredients
For the Chicken Filling
300 grams boneless chicken, cut into small pieces
1 tablespoon cooking oil
1 small onion, finely chopped
1 teaspoon ginger-garlic paste
1 small tomato, chopped
1/2 teaspoon red chili powder
1/2 teaspoon cumin powder
1/2 teaspoon coriander powder
1/4 teaspoon black pepper
1/4 teaspoon turmeric powder
Salt to taste
2 tablespoons yogurt
1 tablespoon chopped fresh coriander
For Assembling
4 medium parathas, homemade or ready-made
1 cup grated mozzarella or cheddar cheese
1 small cucumber, cut into thin strips
1 small carrot, grated
1/2 cup shredded cabbage or lettuce
2 tablespoons mayonnaise
2 tablespoons chili garlic sauce, optional
A little oil or butter for warming the parathas
Step 1: Prepare the Chicken
Wash your hands and prepare the chicken on a clean board. Heat one tablespoon of oil in a pan over medium heat. Add the chopped onion and cook for three to four minutes until it becomes soft and lightly golden. Add ginger-garlic paste and stir for about 30 seconds, taking care not to burn it.
Add the chicken pieces and cook for five to seven minutes, stirring occasionally, until the outside changes color. Add the chopped tomato, red chili powder, cumin, coriander, black pepper, turmeric, and salt. Mix everything so the spices coat the chicken evenly.
Add the yogurt and stir well. Cover the pan and cook over low to medium heat for about eight to ten minutes, or until the chicken is fully cooked and tender. Stir occasionally. If the mixture becomes too dry before the chicken is cooked, add one or two tablespoons of water. Remove the lid and cook briefly to evaporate excess liquid. The filling should be moist but not watery, because too much liquid can make the parathas soggy.
Turn off the heat and mix in the fresh coriander. Let the filling cool slightly before assembling the rolls.

Step 2: Prepare the Vegetables and Sauces
Wash the cucumber, carrot, and cabbage or lettuce carefully. Cut the cucumber into thin strips, grate the carrot, and shred the cabbage or lettuce. Keep the vegetables on a clean plate.
In a small bowl, mix the mayonnaise with chili garlic sauce if you prefer a spicy flavor. For a milder roll, use mayonnaise alone or mix it with a little plain yogurt. Adjust the sauce to suit your family’s taste. Avoid adding too much sauce, as it may make the roll difficult to wrap and eat.

Step 3: Warm the Parathas
Heat a flat pan or tawa over medium heat. Warm each paratha for one to two minutes on each side, following the package instructions if you are using ready-made parathas. Add a small amount of oil or butter if needed. The paratha should be flexible enough to roll without breaking and lightly golden on the outside.
Do not overcook the parathas at this stage. If they become too crisp, they may crack when folded. Place each warm paratha on a clean plate and prepare the filling and toppings nearby so you can assemble the rolls while the parathas are still soft

.
Step 4: Assemble the Chicken Cheese Rolls
Place one warm paratha on a clean surface. Spread a thin layer of sauce down the center, leaving space around the edges. Add a portion of the cooked chicken filling. Sprinkle grated cheese over the chicken while it is still warm so the cheese begins to soften.
Add a small amount of cucumber, carrot, and cabbage or lettuce. Do not overfill the paratha, because too much filling can make it tear. Fold the two sides slightly inward, then roll it tightly from the bottom to form a neat wrap. Repeat with the remaining parathas and filling.
For a crispier finish, place the assembled rolls seam-side down on a warm pan. Cook for one to two minutes on each side until the paratha is golden and the cheese has melted. Keep the heat moderate so the outside does not burn before the inside becomes hot.
Step 5: Serve the Rolls
Cut each roll diagonally in half if desired and serve immediately while warm. Chicken cheese paratha rolls taste delicious with mint chutney, ketchup, or a simple yogurt dip. You can serve them with fresh salad or a bowl of soup for a more filling meal.
For children, reduce the chili powder and skip the chili garlic sauce. Adults who enjoy spicy food can add extra black pepper or green chilies to the chicken filling. Keep the vegetables thinly sliced so the rolls are easy to bite and hold together well.

Tips for Better Results
Use boneless chicken cut into similar-sized pieces so it cooks evenly. Make sure the chicken is fully cooked before assembling the rolls. The thickest pieces should reach a safe internal temperature of 74°C (165°F). Allow excess moisture to evaporate from the filling before adding it to the parathas.
Grate the cheese yourself if possible, because it often melts smoothly. Keep the filling warm rather than very hot when assembling, and avoid putting too many vegetables or too much sauce inside each roll. If you are preparing several rolls, warm the parathas one at a time and cover them with a clean cloth to help keep them soft.
Food Safety
Refrigerate cooked chicken promptly in a covered container and use within three to four days. Reheat until steaming hot. For the best texture, assemble the rolls just before serving.
These chicken cheese paratha rolls combine spiced chicken, melted cheese, crunchy vegetables, and warm paratha. They are easy to customize and make a satisfying homemade snack for the whole family.
